My Fall Morning with My Pumpkin Smoothie

On the first day of Fall, every year for as long as I've been alive {*ahem*} my mom has baked fresh pumpkin pie just for me.  My favorite first bite, much to her dismay, has been right smack dab in the middle of the pie!  Hahaha, yes, it is I who dug out the center of the pie.  Mmm, well I figured since it was "for me" that I had the right to eat it however I wanted.  Apparently, I think what she really meant was that I inspired the pie, but that it was still for the entire family.  Needless to say, she began baking 2 pies every year on the First Day of Fall.  

Because of my love for pumpkin pie, yet my dedication to healthier eating, I wanted to find a delicious and satisfying recipe for a Pumpkin Pie Smoothie.  I like to buy the Weight Watchers Smoothie mixes because they help me get in my 2 daily servings of dairy when mixed with milk, so I like to use it as a base.  You can always mix in some milk, powdered milk, whey or soy protein powder...really whatever your mind can dream up.  

I used::
  • a WW smoothie mix
  • 1C milk {I had 1%}
  • 1C of Libby's pumpkin
  • 1 tsp of pumpkin pie spice {I didn't have this, so I used cinnamon, ginger, cloves, and nutmeg
  • ice
I ended up adding all the pumpkin from the 15 oz can, a little more milk and ice, and then 1/2 tsp of vanilla {I use Nielsen-Massey Madagascar Bourbon Vanilla} to make enough to share.

Though this one was good and tasty, I am still looking for an even more Perfect Pumpkin Smoothie recipe.  I am inspired.  How about you?
