Warm Chunky Banana Oatmeal Bread

Today felt like a day to knock out breakfast and dessert in one shot.  Boom...DING!  What a great idea!  Chunky Banana Oatmeal Bread!  It's like breakfast...and dessert...in one!  There were 3 ripe bananas sitting on our kitchen table that had been looking at me for days now, begging me not to dispose of them in the same manner and with the same fate that was received by their predecessors.  In the trash.  However, I should mention that they were laid to rest in a Simple Human trash can...so it was a fancy burial, to say the least.

I regularly eat oatmeal with milk, cinnamon {a few teaspoons full} and 2 packets of splenda.  It is filling, and fulfilling.  It keeps hunger at bay and is so good for you...and me...that I wanted to find someway to bake something as equally satisfying and delicious.  I went to WeightWatchers.com.  They have a gazillion recipes that are always readily available to help you stay on track.  I love it!!

In my house I have an eager-to-please adorable toddler girl who is always running around and getting in the mix...today, I was able to actually get her in the mix, literally.  Today, we baked together.  Now when she grows up she'll be able to say, "I've been baking with my mom since I was 2 and a half." ❤  I always wondered when that magical moment would present itself, and how it would actually play out.  I must say, it was much easier than I thought it would be to include her.  Kids can cook.  Kids can bake.  It's fun.  We collected all of our ingredients, which she LOVED, and gathered our measuring cups and spoons because it is important to be precise.

This recipe was moist, delicious, and heavy {dense}...in a good way.  It was filling, and believe me, I had my fill!  Bake this when there are people to share it with...or freeze the leftovers for quick and easy meals or snacks.  Why?  Because you'll want to eat the whole thing...I know because I practically did. {I hope *Teresa's not reading this...  :O  }

Banana-Oatmeal Bread {official WW name}

This nutritious bread is easy to mix up and will make the whole house smell wonderful.
{You might add some cinnamon or different spices...to...Spice it up}

Ingredients



1 1/4 cup(s) all-purpose flour   

1/2 cup(s) unpacked brown sugar   

1/2 tsp table salt   

1/2 tsp baking soda   

1/4 tsp baking powder   

3 tsp canola oil   
  1 large egg(s), beaten   
  2 large egg white(s), beaten   
  3 large banana(s), ripe [I left mine chunky]  

1 cup(s) uncooked old fashioned oats   

Instructions

  • Preheat oven to 350°F. In a large bowl, stir together dry ingredients. Add oil and eggs; mix thoroughly.
  • In a smaller bowl, mash bananas with a potato masher or fork {mine were a bit chunky}. Add bananas and oatmeal to batter.
  • Spray a loaf pan with cooking spray. Pour batter into pan and bake until top of loaf is firm to touch, 45 to 55 minutes. Remove from oven and allow to cool in pan for 5 minutes. Flip out and cool on a wire rack for another 10 minutes.

Wooden Watches



I discovered these watches ...*ahem*, pardon me, timepieces,  by means of an email I received today, and was instantly intrigued.  I love the design, the story, the fact that for every watch purchased WeWOOD will plant a new tree.  I admire that.  They seem overall reasonable.  They have styles that come in 2 prices, $119 and $139.  I plan on getting one for my husband.  He's into watches, and it will add a new element of style and understated awesomeness to his daily ensembles.

Autumn Carnival Chaos & Treats




 ...Today seemed like one of the busiest days for me, and it was mostly all mental.  In fact, I had to make several lists today [pretty much with the same things on them] in order to clear my brain of all the clutter and mind-racing confusion.  Starting yesterday I realized that I only had 2 days [including yesterday] to get my daughter's costume ready for our church's Fall Carnival, and then spaced about the fact that I had also signed up to make some treats for the annual Cake Walk.  I heard that people wanted something fresh and new, not just the usual boxed mix cupcakes.  Ok, no problem.  Here it is, the night before, and somehow I still have to go to a Walk-A-Thon tomorrow morning, and get my baby girl ready for the Carnival...and fit in making and delivering the treats.  Yikes!  So while browsing and perusing the online adventure of the internet, here are a few things that I felt were definitely mentionable, bookmarkable, and as soon as Pinterest sends me my invite, Pinterestable.

I fell in love with them during Season 1. I couldn't wait for it to begin, and have been hooked ever since. I even got my husband and my mom to jump on the Beekman Wagon. We love the show, we love the boys, we love the food, we love the soap, and we love the feeling that they instill in us!  Thank you for being you, and making this world so Fabulous!!

Saturday morning, we woke up really early from having stayed out late the night before {it was my wedding anniversary} and headed off to Bates Nut Farm in Valley Center, CA.  It is about a 1hr drive from our house.  We have been going with my mom and dad every year for about 6 or 7 years.  Now after having a baby, holidays seem so much more special since we have someone to make a big deal over and about.  The excitement a child feels is inspiring.

To start off this Holiday Season, Halloween is first on the lineup, so we went to get some pumpkins and squash and whatever other spooky spectacle we could find to complete the décor of our home, inside and out.

It's always a good idea to get an early start when heading off to Bates Nut Farm.  The lines can grow and become ridiculously long by noon.  They open at 9am.  Though we always plan to arrive exactly at 9, if not a little before, it never fails that our family just can't seem to make it out the door on time.  In addition, we are the family that ALWAYS forgets something.  ALWAYS.  It never fails.  Whether it's just from the driveway back to the house, or already on 805 and have to get off and turn around, someone from our family always has to go back to the house to retrieve some forgotten item; sunglasses, wallet, theme park passes, coupons, sweatshirt, gum, drink, snacks, or the classic..."I gotta pee".  By this time, we can only laugh about it.  The person who gets the most frustrated is the forgetful person.

Bates Nut Farm has tons to do, with plenty of events throughout the month of October.  They have all the necessary information posted on their website, which ranges from the hours of operation, costume contests, scarecrow contests, hayrides, pony rides, corn mazes, and the list goes on.  They also have a row of delicious food stands.  Our personal favorite:  The Corn Salad!!  The recipe is a secret, of course, but the already identified ingredients include, fresh corn off the cob, butter, salsa, cilantro, and possibly crema {a Mexican kind of sour cream...but not as sour as what we're used to}.  This year we brought some tupperware to bring some home with us.  It's that good.  They also have the classic Kettle Corn, grilled corn on the cob, pulled pork sandwiches, tri-tip, with fixins, and much, much more.  The ambience is fun and exciting, the weather is usually warm, and there are endless photo ops, so bring a camera!  If you've never seen a giant pumpkin, they grown plenty of Big Macs here!  They are sold by the pound.  I've seen them up to 160 lbs!!  You can try to look for the "perfect" one, but keep in mind that each and every imperfection adds to the pumpkin's charm.  They're all spooktacular.

We made some awesome memories that we'll treasure for as long as we can remember.

If you live in San Diego, live a short distance away, or are planning on coming during Fall, you must make Bates Nut Farm in Valley Center one of your points of interest during your trip. Stop in, check out the pumpkins, go inside the store, buy some Pumpkin Fudge {the BEST pumpkin fudge!!} {you can sample ALL flavors...this year they have watermelon}, buy all kinds of delicious nuts and candies and dried fruits, try the corn salad, and take lots of pictures!!   You will want to remember this trip forever.

The Perfect Pumpkin Smoothie

My Fall Morning with My Pumpkin Smoothie

On the first day of Fall, every year for as long as I've been alive {*ahem*} my mom has baked fresh pumpkin pie just for me.  My favorite first bite, much to her dismay, has been right smack dab in the middle of the pie!  Hahaha, yes, it is I who dug out the center of the pie.  Mmm, well I figured since it was "for me" that I had the right to eat it however I wanted.  Apparently, I think what she really meant was that I inspired the pie, but that it was still for the entire family.  Needless to say, she began baking 2 pies every year on the First Day of Fall.  

Because of my love for pumpkin pie, yet my dedication to healthier eating, I wanted to find a delicious and satisfying recipe for a Pumpkin Pie Smoothie.  I like to buy the Weight Watchers Smoothie mixes because they help me get in my 2 daily servings of dairy when mixed with milk, so I like to use it as a base.  You can always mix in some milk, powdered milk, whey or soy protein powder...really whatever your mind can dream up.  

I used::
  • a WW smoothie mix
  • 1C milk {I had 1%}
  • 1C of Libby's pumpkin
  • 1 tsp of pumpkin pie spice {I didn't have this, so I used cinnamon, ginger, cloves, and nutmeg
  • ice
I ended up adding all the pumpkin from the 15 oz can, a little more milk and ice, and then 1/2 tsp of vanilla {I use Nielsen-Massey Madagascar Bourbon Vanilla} to make enough to share.


Though this one was good and tasty, I am still looking for an even more Perfect Pumpkin Smoothie recipe.  I am inspired.  How about you?

An Autumnal Friend

The following is a card I received from my best friend in High School.  As the years pass by, we realize how much we change, but still feel the same.  It's hard to explain to a High Schooler.  But their innocence is desirable to the cynics that grow within us.  And then once in a while, we do grow older with those same friends.  Our relationships deepen, and we become even closer to one another.

I'm so glad you're my bestest friend.  I always have someone to talk to (unless you're away with the softball team, or someone OTHER than me is at your house)!  I'm just joshin' ya!  Well I've been thinking and we really should stick together.  I can't imagine my life without you, now.  You've been a great influence on me (Dope, what you have done)!  I'm glad God sent you to me and that He sent me to you.  

I know I should listen to you more often and I regret that now.  But we all have to learn from our mistakes, right?  I know that others don't listen to you either sometimes, but I will always be here, don't ever forget about me.  There will never be a problem too big or embarrassing that I can't go to you about and I hope you can say the same about me.  I'm grateful for that! 

Another reason I'm so grateful you're my friend is because you ARE funny automatically.  When I'm around you I'm always laughing, and no it's not because of your looks but it's your jokes.  Humor keeps my soul alive and in that sense you are my life support.  Thank you for always being there..."

Apple Pie Gum!






I've tried this Sugar-Free Gum, and I love the Apple Pie flavor [they have other flavors, as you can see in the picture, like Strawberry Shortcake.  Apple Pie is my favorite].  In fact, my mom, dad, and husband all love it as well.  It's such a delicious way to feel indulgent without adding unnecessary poundage to your body.  Plus, it's good for your teeth after dinner...the same time you would have something sweet. {I suppose this wouldn't be the perfect "dessert" for those who eat dessert before dinner.}

Target {I found this deal at the Target in Plaza Bonita, National City}, sale until 10/8.  Try it out.

Weight Watchers with Dr. Oz

FYI, I'm not really too familiar with Dr. Oz.  I've seen parts of his show maybe 2 or 3 times.  I neither know what channel it's on nor what time it airs.  However, I AM familiar with Weight Watchers, being a Lifetime Member [meaning at some point in my life while following the program I reached my goal weight, and maintained it for 6 weeks] back again for my 2nd go at it, after getting married, gaining weight, moving out, gaining weight, getting pregnant, gaining LOTS of weight, having a baby, gaining more weight...  Weight Watchers is the only lifestyle change I've ever really attempted, other than trying not to eat.

I joined the first time when I was 23, weighing around 170lbs something.  I think I was 177.  I made goal at 146.4lbs, and remained there for about the total amount of time it takes you to blink....once.  And so here I am, returning to my roots, where my food education began, where I and many others have been successful with the right tools to live out our everyday lives, being faced with food and challenges every day, weighing today {Tuesdays are my weigh-in days} at 197.8!  That's right, down one pound from last week.  I love it.  I love every victory, and if/when I am up, I don't let it stop me or get it my way.  I know I can make it...but I only want to with Weight Watchers
 
Fruit is 0 points+.  Seriously, with it I never have to feel hungry, I always know my better food options, which ones will keep me satisfied longer, without any restrictions.  It allows me to be flexible.  It allows me to be spontaneous.  It allows me that celebratory piece of cake.  And ha, if it's good enough for Jennifer Hudson, isn't it good enough for anybody?  I mean, she is a celebrity and all.  {smiley}

Now back to WW and Dr. Oz.  At my meeting last week my leader, Cherie, told us and inspired us to join the Transformation Nation campaign that's going on right now with Dr. Oz and Weight Watchers.  If you've never heard about it, go and read about it.  It's called Transformation Nation Million Dollar You.  The winner who is picked as transforming the most will win 1 million dollars...hello!?!  One Million Dollars.  Who doesn't want to try for that?  Positive energy, good vibes...

I think what is truly exciting and motivating is that Dr. Oz, this well-known and very popular doctor who shares his knowledge in layman's terms with viewers so that we can all understand has picked Weight Watchers as THE healthy way to eat better, lose weight, and live a life the way it's meant to be lived.  He didn't pick Jenny Craig.  He didn't pick Atkins.  He didn't pick Medifast.  Do you know why?  Because those programs don't and won't teach you how to eat, nor will they teach you how to live your life with your biggest temptation, food, yet triumph over it while still consuming it.  Food is tricky because we all need it to live, yet sometimes it's hard not to overeat.  It's not like alcoholics where they just quit drinking.  Nor is it like smoking where you just stop smoking.  Food is essential, so it's important to learn about food and get educated.  You want to feel great.  But most Americans don't.  We feel heavy.  We feel slow.  We feel sluggish.  This is an opportunity to make a change, today.  We all talk about doing it, so here's some extra motivation:  1 Million $$$.  Yeah buddy!

Needless to say, I joined, and I'm sharing it with you to give you the opportunity to join in for the best cause of all:  YOU!  Each individual will benefit from this.  This is for everyone.  I challenge you to challenge yourself.  Go Transform!!

{UPDATE} A Great Costume

One of my favorite sites that I check daily {read that as ALL DAY} for fun ideas, projects, inspiration, and items to buy is Etsy.  Every day they have a Featured Seller, and today's is The Costume Cafe "NotTheKitchenSink".  The creative mind behind {UPDATE} "NotTheKitchenSink" The Costume Cafe is Sara Carter, a wife and mother living in Houston, TX.  Even after first glance, you'll notice right away how awesome and amazing her costumes are and the quality they possess.  They are so cute, and quite frankly, worth every penny for a handmade creation.

A Day of {un}Rest

I was milling about this morning, undecided about what I wanted to do.  It was too late to go to church...it had already started, and with a sink full of dirty dishes, I didn't want to stick around to find out who was going to pull the shortest straw on that one.  It's me.  It's always me.  [insert eye roll here]

I decided to head on out to 24 Hr to get my move on!

Pumpkin Season Day 1

Happy October 1st!  Today begins pumpkin season.  Oh, I know that it's already Fall, but because Fall begins in the tail end of September, October really starts off Halloween and Pumpkin Season for us.  It's like the official "go ahead and get to crazy decorating".

Our family has a fairly new tradition of going to Bates Nut Farm every year to pick out some carving pumpkins, buy some squash, eat lunch, take a pony ride...we're the crazy family that buys a gigantic Big Mac pumpkin!  Yes, the average weight is 100lbs.  Wow!  It is really fun to see it out on the porch.  I imagine if we were to ever cut it open, those seeds would be HUGE!  It would probably make a ton of pumpkin pies.  Ours just sits on the porch, looking spooky and wicked, enticing curious trick-or-treaters to take a closer look.  They really should BEWARE!  We've learned through the years that the more gnarly the pumpkin, the better.  We no longer look for the perfectly round.  Martha Stewart helped us learn to appreciate this quality.

This year my little girl is really getting excited about dressing up in a costume and going trick-or-treating.  She loves pumpkins!  This magical age of 2 1/2 where she is beginning to understand things, and has a definite opinion about everything.  Last year she was a Tinker Fairy, and the year before she was a Ladybug.  This year's costume has yet to be determined...but here are some fantastic costume options for anyone who is also looking.
